Call It Supper: Summertime Potato Pancakes

At Call It Supper, we are continuing our celebration of summer by adding the season’s vegetables into dishes we know and love—one of which is the Potato Pancake (latke). Call It Supper author, Tori changed up this dish, which is traditionally served with apple sauce and/or sour cream to include corn in the mix and a tomato-basil salad to brighten up the flavors.
RECIPE: Summertime Potato Pancakes
I love potatoes because they are versatile and inexpensive. One of my favorite ways to enjoy them, besides in the chip or fry form, is as a pancake because it becomes a vessel for delicious toppings. For this recipe, I added in corn to the potato-onion mixture to add a bit of sweetness and char flavor and topped it with sour cream and a mixture of tomato, basil and champagne vinegar. Its an easy recipe that can be made into smaller rounds to entertain with the fixings on the side or as I did last week, in large rounds for a vegetarian meal.
Steps & Ingredients
- Shred potatoes and onions and squeeze out the excess liquid
- Mix with corn, egg, and salt and pepper
